Target Haul, OOTD, DIY & Stew!

We are expecting about 10" of snow here in Virginia, yes 10" on the first day of Spring!  Personally, I love snow.  Winter is my favorite season mostly because of the snow.  Not only is it beautiful and I love getting cozy inside and watching the snow fall but I love getting a snow day off from school!  Few things make me happier!  So on this snowy spring day I thought it would be just perfect to make our favorite Beef Stew to fill our tummy and keep our spirit warm.  This recipe is inspired, as all my best recipes are, from the stew my mom would make when I was young.  Mom's was light years better but when ever I make it I think of her so that makes me happy.




Beef Stew

1 1/2 lbs of stew meat
large onion chopped
6-7 celery stalks chopped
1/2 cup wine
flour
beef stock
28 oz can of tomato sauce
5 red skin potatoes cut in bite sized pieces
several carrots sliced
salt/pepper
garlic powder
basil
sugar
rosemary

So first off, this recipe is very forgiving.  Meaning that you can add as many potatoes, carrots and seasonings as you like and it will still taste delish!  First add oil and 1 tblsp butter to a large pan.  season well meat with s/p and garlic powder. Roll each piece in flour and brown in pan.  Meanwhile in a stock pot saute celery and onion in oil and butter until soft.  Add wine and cook 1-2 minutes.  Add about 3/4 of the tomato sauce and 2 cups of broth.  Bring to boil.  When meat is all browned, add to stock pot.  Season with s/p tablespoon garlic powder, half teaspoon of rosemary, teaspoon of basil, tablespoon of sugar.  Add chopped potatoes and carrots bring to a boil.  Cover and reduce heat and simmer for about an hour until veggies are soft and meat is cooked through.
