One 4 Me, One 4 You: Oatmeal Chocolate Chip Cookie Recipe for 2

How many times have you been wishing for a homemade cookie but you had zero interest in baking a few dozen when you just wanted one?  You know the feeling, you want something sweet, something chocolate, you just can't stop thinking about it.  You know what you want, you have known all along.  For me that "something" is always OATMEAL CHOCOLATE CHIP COOKIES.  They are my favorite and if I can put them in a bowl and cover them with ice cream, all the troubles of the world fade away...

Here is a recipe that is sure to come in handy when those cookie cravings hit but all you want is two cookies.

Oatmeal Chocolate Chip Cookies for 2

2 tablespoon butter
2 tablespoons brown sugar
1 tablespoon granulated sugar
pinch of salt
1/8 teaspoon cinnamon
1 egg yolk
1/4 teaspoon vanilla 
1/4 cup plus 2 tsp flour
1/4 teaspoon baking soda
2 tablespoons oatmeal (I use minute oats)
3 tablespoons chocolate chips

Preheat oven to 350.  Cover a small cookie sheet with parchment paper.


1. Melt butter in small sauce pan.
2. Add brown sugar
3. Add granulated sugar
4  Add pinch of salt

5. Add cinnamon
6. Add vanilla 
7. Add egg yolk
8. Add baking soda
9. Add flour
10. Add oatmeal
11. Add Chocolate Chips
12. Mix all ingredients together well.  Divide dough in half and roll each half into a ball and place on prepared cookie sheet.  Bake for approx 12-15 minutes.  Maybe a bit longer depending on your oven.
This recipe makes 2 large cookies, you could make 4 smaller cookies just remember to adjust baking time!

If you need a little more happiness in your life, put your cookie in the bottom of a bowl and top it with ice cream, chocolate sauce and the secret ingredient...extra chunky peanut butter!

DIY: I Just Love a Cute (Table) Skirt


I have a bit of a crush on burlap.  I just think it's beautiful.  I know, beautiful may not be what you think of when you see a length of burlap fabric but I love the natural color and the rustic texture.  To me, it is beautiful.

 So when I was looking for a way to dress up this simple table in my upstairs hallway, naturally burlap came to mind.
BEFORE

So I looked to some of my favorite blogs for inspiration and when I came across this beautiful picture on Dixie Delights I knew what I wanted to do.


I ran out to Joann's Fabric store and bought several yards of burlap, thankfully burlap is so cheap I was able to get more then I needed.  I dug out my honey's staple gun and got to work.  I began by folding over the edge and stapling it around the entire table, just under the top, over lapping every so often to create pleats.  In not time at all the table was complete.


Because I am super lazy, I didn't even hem the bottom.  I just pinned up the hem, until the burlap stiffened up a bit, as it naturally does, and removed the pins a few days later.  I also added a folded piece of fabric along the top to cover the staples and my project was complete! All that was left was to add some of my favorite decorating pieces.

I always add some family pictures in any decorating projects.  I love my family and nothing makes me happier then seeing there sweet faces everywhere.



This little project had 3 of my favorite qualities, easy, fast and cheap.  It  still remains one of my most favorite projects I have done.

Monday Morning Oatmeal Recipe


I am a person of habit.  I pop my gum,  I never leave the house without my water bottle,  I like to buy the same top in every color it comes in. (That's normal, ..right?)   And I tend to eat the same thing for breakfast most days; oatmeal.  Not trendy steel cut or instant, just good ole reliable Quaker Oats.  I love the warmth of a bowl filled with oatmeal, topped every time with pecans, strawberries, blueberries and bananas.  It's basic and wholesome, fills my tummy and does my heart good.  This recipe will make one bowl,  if your sharing with your sweetheart, just double the recipe.



Monday Morning Oatmeal 
1 cup skim milk
1/2 cup Quaker Quick 1 Minute Oats
1 Tbsp brown sugar
1/2 tsp vanilla
1/2 tsp cinnamon
1/2 salt
Pecans to taste
Mixed berries
1/2 banana

Bring to a slight boil in a small sauce pan milk, brown sugar, vanilla and cinnamon.  Stir in oats and cook for about a minute stirring constantly.  Transfer to a serving bowl and top with fruit.

Good every time and it doesn't even have to be Monday!

The Rites of Summer

Summer has hit my hometown bringing forth many wonderful sights, sounds and tastes.  One of my  favorite summertime sights are FIREFLIES  or LIGHTENING BUGS, depending on where you grew up.  Lightening bugs have always been a beautiful reminder of late summer evenings outside watching the sunset, with your toes in the grass and a cool drink in your hand.  My favorite summertime sound is THUNDER in the distance.  Hearing the rumble somewhere in the air has always been very comforting to me.  All the better if I'm lying in bed with the window shade up and I can see the sky light up just a little bit after the rumble. But by far my favorite taste of summer is BLACKBERRY CRUMBLE PIE...(oh my, I'm going to need a moment...)  We are so fortunate in my small town to have a bakery, Mom's Apple Pie, that makes the best blackberry crumb pie that I have ever tasted.




  Now, this little bakery has fed presidents, been featured in Southern Living Magazine and has appeared on Jamie and Bobby Deen's Food network show Road Tested.  I consider myself a baker and some have said that I am a very good baker, but Mom's Apple Pie Bakery's Blackberry Crumble Pie takes the cake :0) (sorry, I couldn't help myself) They grow all their own fruit, their  blackberries are super sweet with just the perfect amount of tartness.



 The crumble topping is crunchy, not too sweet, with just the right amount of toasted pecans mixed in.



These wonderful pies are only available for a few weeks during the summer, usually beginning just before the 4th of July and just until the 31st.  Just incredible, worth the wait and every single calorie.  I like mine with some vanilla ice cream and a little Hershey Syrup.

We have an exciting week ahead of us, we will be visiting some grad schools  with my college boy,  getting ready to start marching band camp with my daughter Boo, and a not too exciting visit about some pesky wisdom teeth with my Scout.

Good Things!



Hello Friends!  I hope life is treating you all well.  I have been absent from posting but I have been busy!  There are GOOD THINGS going on here at My Bashful Life!  I am sure you have already noticed my new look.  I worked with blog designer Rebekah Louise at Rebekah Louise Designs to create a blog designed that fit me and what I enjoy writing about in my blog. See her designs here.


 She was great to work with, and brought all of my online life ( Etsy, Instagram, Pinterest, YouTube) together in one place.  I wanted something that would reflect HAPPINESS and I think Rebekah created that for me.  We are still working out some details but I am thrilled with the outcome.   I have been busy working on the blog design and I have been busy setting up my Etsy Store.  My Bashful Life Designs is a shop I want to fill with all those little touches that mean so much.  Handmade clips for daily planners, cards for that special someone, burlap wreaths and some pretty frames, soon there will be gift bag sets for an adorable gift presentation.  I am working on some special baby gift ideas too!
