One 4 Me, One 4 You: Oatmeal Chocolate Chip Cookie Recipe for 2

How many times have you been wishing for a homemade cookie but you had zero interest in baking a few dozen when you just wanted one?  You know the feeling, you want something sweet, something chocolate, you just can't stop thinking about it.  You know what you want, you have known all along.  For me that "something" is always OATMEAL CHOCOLATE CHIP COOKIES.  They are my favorite and if I can put them in a bowl and cover them with ice cream, all the troubles of the world fade away...

Here is a recipe that is sure to come in handy when those cookie cravings hit but all you want is two cookies.

Oatmeal Chocolate Chip Cookies for 2

2 tablespoon butter
2 tablespoons brown sugar
1 tablespoon granulated sugar
pinch of salt
1/8 teaspoon cinnamon
1 egg yolk
1/4 teaspoon vanilla 
1/4 cup plus 2 tsp flour
1/4 teaspoon baking soda
2 tablespoons oatmeal (I use minute oats)
3 tablespoons chocolate chips

Preheat oven to 350.  Cover a small cookie sheet with parchment paper.


1. Melt butter in small sauce pan.
2. Add brown sugar
3. Add granulated sugar
4  Add pinch of salt

5. Add cinnamon
6. Add vanilla 
7. Add egg yolk
8. Add baking soda
9. Add flour
10. Add oatmeal
11. Add Chocolate Chips
12. Mix all ingredients together well.  Divide dough in half and roll each half into a ball and place on prepared cookie sheet.  Bake for approx 12-15 minutes.  Maybe a bit longer depending on your oven.
This recipe makes 2 large cookies, you could make 4 smaller cookies just remember to adjust baking time!

If you need a little more happiness in your life, put your cookie in the bottom of a bowl and top it with ice cream, chocolate sauce and the secret ingredient...extra chunky peanut butter!

  5. Oh, I love that this only makes a couple of cookies! I don't have much of a sweet tooth (I gravitate towards salty) but every once in awhile I get a craving, but hate making more than I would eat because it's such a waste. This is perfect for me!
